Leggo that Eggo for Good!

Eggo product.

CNN reported last month that:

“Kellogg is rationing its Eggo products due to flooding and equipment problems at two bakeries. The shortfall could last through mid-2010.”

When I first heard this story reported last month, all I could think was "this is a ration I can get behind."  I just kept thinking this is silly, I mean it's not even food so I'm sure people aren't "worried" as the article stated.    WOW, was I wrong!

Here's what happened: I started paying attention to media reports - online, newspapers, radio...just listening and reading.  I was shocked by everything I was learning.  There is just no way people are that worried, I kept thinking.  No way.  SO, I made my way to two large grocery stores to prove myself right.  The idea: simply  observe Eggo shoppers.  What I really saw: Black Friday x2.  I really couldn't believe it!  The reports were right...people were actually concerned they wouldn't have one of their favorite breakfasts available soon and so they were STOCKING UP!   

After I left the second store my mind went numb.  I just didn't understand the 'fear' over Eggos!  Then it hit me.  Like everything else with food today, people want quick and easy meals.  Heck, I love quick and easy meals too!  So, here you go Eggo fans.  Here's my attempt to help you get through this ration.  A good and healthy waffle recipe I have found.:  http://waffleparty.com/2009/10/20/vegan-coconut-buckwheat-waffles/

And remember, you can make up extra waffles to save for later.  Just freeze the uneaten waffles in an air-tight container or freezer bag with sheets of parchment paper in between.  When you're ready to eat, take them out and reheat either in the waffle maker or in the toaster.  Enjoy!

A great tip is whenever you make waffles or pancakes, make a larger batch that you expect to use. Then, as Lisa notes, refrigerate (if you plan to eat in a few days) or freeze individual portions in freezer bags. We just throw throw them in the freezer without parchment. When you want to eat them, you can defrost in the m/wave and then toast to "recrisp" them to your liking.
