About Me

My admiration for food started at a young age. In fact, some of my favorite childhood moments are based on food memories.  Family gatherings on my father's side (German heritage): cookies, cakes, tortes, breads.  Family gatherings on my mother's side (Norwegian): lefse, cookies, coffee, potatoes, soup.  I never wanted to be rude and knew even back then that the socially acceptable way of showing my appreciation to the chef was to eat A LOT!  I also adored Sunday morning church.  Kid translation: donut heaven!  Yep, looking back food has been an intregal part of my life experiences; some of my fondest of memories.  It's no wonder when asked what my hobby is, even to this day, I declare 'eating' with pride!

Yes, I have always loved food - salty, sweet, savory - you name it, I would eat it!  Then one day things started to change.  After being in a highly stressful work environment, I started to suffer numerous health conditions.  I thought I was just the unlucky person to always get the virus.  Afterall, my symptoms did not seem like anything special - not even to the GP's who treated me (all 12 times).   But mix these symptoms together, at a chronic state for 2.5 years, and you have a recipe for a miserable life and unbearable outlook on your future: sinusitis, runny nose, sunken eyes, skin rashes, itchy skin, digestive discomfort (bloating, gas, constipation, diarrhea), moody, lethargic, foggy brain, low concentration, and just all around irritated.  Didn't I sound like a ball of fun?

And to add insult to injury, my father's health had been suffering (and continues to suffer) for an extended period of time.  At the age of 52, my father suffered his first massive heart attack.  Along with his second, Type 2 diabetes diagnosis and series of other health ailgnment s in the years that followed, he is now up to 23 pills a day.  Feeling my health decline rapidly at such a young age and watching my father's health (and thus, my 'gene-pool'), I knew I had to do something.  I had to reclaim my health.  And the only way I knew how to do that was through diet and lifestyle changes.  

While beginning my journey toward a happier and healthier future, I was blessed to be living abroad in Edinburgh, Scotland, where the foundation to a healthy life revolved not just around eating locally, but also learning how to work less and play more.  This is a skill worth learning and especially difficult for us Type A's out there!

I am no longer intrigued with just eating.  I am now fully engaged with what I'm eating, where it's from, and my cravings.  I have discovered the foods that fuel me for excellent performance, foods unique to my body and equally importantly, foods that drain my energy.  I have learned first hand the power of food sentivities and how they can greatly affect your health.  (If you're curious, I have sensitivities to cow's milk, peanuts, gluten, bananas, MSG, and nightshades - yikes!).   All this and yet, food is only one aspect to a healthy life.  Diving head first into the other key components, what I call 'life foods,' is essential for optimal health. 

I'm now on the journey of a lifetime!  My digestion is healed, I know exactly what my body needs and why it craves certain foods, my skin is clearer than ever before, no more itchy skin, my energy is THROUGH THE ROOF, and I'm back to loving life to the fullest!   Vitality is back, and it's amazing!  Part of the reason my life is extraordinary is because I get to live my dream to help busy women achieve their happiest and healthiest life!
